Vegetable Oil is an unsaturated hydrocarbon when hydrogen H2 is Added tp Vegetable oil in the presence of Nickel catalyst it gives saturated fat like artificial ghee. The reaction is called the Hydrogenation of oil.

Difference Between Vegetable oil and Vegetable fat (Saturated fat) is that Vegetable oil is liquid and saturated fast is solid or semi-solid at room temperature.

Nickel acts as a Catalyst.
