The conversion of ethanol to ethanoic acid is an oxidation reaction because the alpha carbon oxidation state is 1 in ethanol and the alpha-carbon oxidation state is +3 in ethanoic acid.

so the OS changes = 3-1 = +2 increase 

Increasing of OS of the atom is an Oxidation reaction.
