The bile juice created by the liver and stored in the gallbladder increases the surface area of the fats in the small intestine by grouping them into a small cluster. 

Then the actual digestion of fat is done by lipase which is an enzyme in the pancreas.

In simple words the breakdown of large fat globules into smaller fat droplets is called Emulsification of Fat.
