When food materials containing fats and oils are left for a long time they become rancid.

Observable changes –

1. Change in taste

2. Change in smell

Three ways of prevention :- i) Addition of antioxidants / substance which prevent oxidation. ii) Keeping food in air tight containers. iii) Use of nitrogen gas in packaged food
