Fishes die when taken outof the water because gills are richly supplied with blood capillaries  and can readily aborb the dissolved oxygen in water. When fishes are taken out of water, the supply of oxygen to the fishes is cut due to which gills arches and  due to which fishes are not able to  absorb and breathe xygen present in the atmosphere. It results into the suffocation and hence, ishes die.
