The bicarbonate and phosphate ions contributes as a buffer and therefore results in pH maintained as 6.85-7.4 of saliva.Ptyalin results in breakdown of glucose to maltose in buccal cavity itself considered as first step of digestion. Saliva composition has 95.5 % water content in it.
