Microorganisms such as Lactobacillus and others commonly called lactic acid bacteria (LAB) grow in milk and convert into curd.

Process:

A small amount of curd added to fresh milk as inoculum or starter contains millions of LAB, which multiply at a suitable temperature. The sugar in the milk, i.e, lactose is acted upon and utilized by these bacteria. It leads to the oxidation of lactose into lactic acid which leads to partial digestion and coagulation of milk proteins to form the curd.

Beneficiary role:

LAB leads to an increase in Vitamin B12 content of curd thus increasing in nutritional quality. In our stomach, too LAB plays a very important role in checking disease-causing microbes.
