Enzymes are complex nitrogenous organic compounds which are produced by living plants and animals. They are actually protein molecules of high molecular mass and form colloidal solutions in water.

Numerous reactions that occur in the bodies of animals and plants to maintain the life process are catalysed by enzymes. Some examples of enzyme catalysis are,

1. Inversion of cane sugar by invertase enzyme.
\mathrm{\mathrm{C}_{12} \mathrm{H}_{22} \mathrm{O}_{11}(a q)+\mathrm{H}_2 \mathrm{O}(l) \rightarrow \mathrm{C}_6 \mathrm{H}_{12} \mathrm{O}_6(a q)+\mathrm{C}_6 \mathrm{H}_{12} \mathrm{O}_6(a q)}

2. Conversion of glucose into ethyl alcohol by zymase enzyme
\mathrm{ \mathrm{C}_6 \mathrm{H}_{12} \mathrm{O}_6(\mathrm{aq}) \rightarrow 2 \mathrm{C}_2 \mathrm{H}_5 \mathrm{OH}(\mathrm{aq})+2 \mathrm{CO}_2(g) }

3. Conversion of milk into curd by Lacto bacilli enzyme.
Hence, conversion of glucose into ethyl alcohol by zymase enzyme.

Hence option 2 is correct.
