This experiment of boiling leaf in water and then dropping iodine and spirit solution in it is done to show the presence of Starch in the solution, which comes from the leaf. 

if there is no color change then it means that the leaf did not have any starch in it but when the color of the solution changes to blue-black then it confirms that starch is present in the solution which was there is the leaf.
