Q 19. Oil and fat-containing food items are flushed with nitrogen. Why?

We know that nitrogen is an inert gas and does not react with oil- and fat-containing foods. Whereas, other gases like oxygen react with oil and fat-containing foods and make them rancid. Hence, to remove oxygen and prevent rancidity, food items are flushed with nitrogen.
