Cut pieces of beetroot do not leave colour in cold water but do so in hot water. Explain.

In hot water, the plasma membrane of the beetroot leaks, and the pigments are loose in the water causing the coloring. The cold water is much lower in temperature, causing no damage to the plasma membrane, and no color is leaked.
